I have mentioned before that once a month cooking is a life saver in our house. Right now we are in a specifically busy time and I was finding that I would look up and realize it was lunch time and I had not had breakfast yet. The hubby was not happy with me and kept fussing at me to remember to eat. I figured that the easiest way to have breakfast ready was to do a once a month cooking spree and get some weight watchers friendly breakfasts in the freezer.
I was in a rush to get these in the freezer before we had to leave to go look at a new rental house (more on that later!) so there are not a ton of pics. Sorry!
First up was a Turkey Bacon Breakfast Burrito!

1 lb turkey bacon
1 large container of egg beaters
1 bell pepper, chopped
1 onion, chopped
1c. spinach, chopped
1 package of small four tortillas (2pts or less)
12 slices of American cheese
Preheat the oven to 350.
Line two baking sheets with aluminum foil and lay out the bacon slices making sure they don't touch.
While the oven heats add the chopped veggies to the egg beaters and mix well. Lightly butter, or use cooking spray, 2 muffin pans. Add 1/4c of egg mixture to each muffin cup. *Half the egg mixture is for the breakfast sandwiches below. If you are not making both recipes just cut the ingredients in half*
Bake bacon and egg mixture for 15-20min checking regularly till bacon is cooked through and eggs are set. Let cool.
Next up set up an assembly line with your tortillas. Tear cheese in half and lay side by side on the tortilla. Top with bacon and 1 egg "muffin" (I cut my egg muffin in half and laid it side by side).
Once you have all your tortillas assembled simply wrap them in wax paper, add to a ziploc bag, and freeze! When you are ready to eat one simply remove it from the wax paper and microwave for 1-2 min depending on microwave power.

1 lb Turkey breakfast sausage
2 packages lite English muffins
12 slices American cheese
1/2 of the egg "muffins" from above
Cut breakfast sausage into 12 even pieces and bake at 350 till cooked through, about 15min.
Again set up an assembly line and add 1 slice of cheese, 1 egg "muffin" and 1 piece of cooked sausage.
Next up get them all wrapped up and ready for the freezer! To warm them up just take the sandwich apart and place the pieces on a microwave safe place and heat 1-2 min checking after 1 min to see how things are warming up. The bread usually warms up a lot faster then the egg or sausage. In that case I just remove the bread from the microwave and continue warming the remaining ingredients.
